Besides its unexpected and gorgeous color, the purple cauliflower is packed with lots of nutritional benefits:

Easy to find, inexpensive and delicious, sweet potatoes have many health benefits:
- Excellent source in Vitamin B6 and C
- Rich in vitamin D, which helps with energy levels, moods, strong bones, hair and teeth
- Good source of iron, magnesium and potassium.
Ingredients
1 baby purple cauliflower, 1 medium sweet potato, 2 tbsp chopped red onion, 1 tbsp olive oil, coconut milk, ½ tsp turmeric, 1 tbsp toasted sesame seeds, fresh grapes, salt & pepper.
Directions
- Wash thoroughly the baby purple cauliflower and cut the florets into small pieces and steam them for 15’ or until tender. Drain and reserve.
- Peel and cut the sweet potato in small pieces and steam them until tender. Drain and reserve.
- In a deep saucepan or wok over medium heat, sauté 1 tbsp chopped onions in olive oil until tender, mix in the ¾ of the baby purple cauliflower florets (reserve the rest), then add coconut milk, salt & pepper and stir well for approx. 10’. In a blender or food processor, puree the mixture until desired texture.
- In a deep saucepan or wok over medium heat, sauté 1 tbsp chopped onions in olive oil until tender and add the turmeric, salt & pepper, add the cooked sweet potatoes then coconut milk and stir well for approx. 10’. Gently mash by hand the mixture.
- In a saucepan over medium heat, toast the sesame seeds until golden.
- In a serving plate, layer the sweet potato puree, then the cauliflower puree. Add the purple baby cauliflower florets and sprinkle with toasted sesame seeds.
- Slice couple fresh seedless grapes and add then to the dish.
Ayurvedic Qualities
Sweet potato is rich in beta-carotene, a Pitta pacifying precursor to vitamin. It has anti-inflammatory properties and are excellent immune boosters. Sweet potatoes are diuretic and can provoke people with Vata symptoms of dryness. According to principles of ayurveda sesame is heavy to digest and increases moistness of tissues.
