Mint is a popular herb that has much more benefits than being refreshing. Mint soothes the stomach and promotes digestion during inflammation. It also helps with headaches. It has relaxing properties and relieves congestion and fatigue.
Ingredients
½ cup bulgur wheat, 1 diced ripe tomato, 2 cups chopped fresh mint, ½ cup finely diced red onion, 2 tbsp freshly squeezed lemon, 1 tbsp extra virgin olive oil, salt and freshly ground black pepper.
Directions
1. Place bulgur wheat in a bowl, cover with 2 cups of water and leave for 1-½ hours. (For faster results, in a sauce pan, mix the bulgur wheat with double the water, cover, boil and reduce the heat for 5-10’ or until tender)
2. In a mixing bowl, place the lemon juice and salt and whisk until well combined. Season with freshly ground black pepper and slowly whisk in the extra virgin olive oil.
3. Drain the bulgur wheat and mix it with the tomato, fresh mint and onion. Add the dressing and toss well.
